When I got home from this year’s LSA I didn’t really feel like going to the grocery store. Thankfully, I had storage vegetables, dried lentils and tins of veg in my cupboard. I had everything I needed for two-lentil chili from Fresh from the Vegan Slow Cooker. Well, everything but a bell pepper. The recipe was pretty easy. You sauté the onions, garlic, oil and spices. You toss that into the crockpot with the rest of the ingredients and let it cook.
This turned out so spicy and delicious. I thought I’d miss the bell peppers but I didn’t even notice they were gone.by
