So, I’m always on the lookout for new recipes that are tasty and that use up my CSA vegetables. Turnips have been a particularly troublesome item because I never really ate them growing up so I’m not sure where I should even start looking. It was suggested to me that I could use them as a substitute for potatoes. It is nice to be able to have some variety when it comes to side dishes, so I started chopping and cooking the turnips in my pressure cooker with a little bit of vegetable broth and a small bit of chopped onion.
When they were cooked, I tried to mash them like potatoes. It didn’t quite work. So, I put them into a food processor and added a little greek yogurt and some salt pepper.
The outcome was quite like mashed potatoes, it was more like minced turnips but the flavor was just right for a side dish. The yogurt added a little bit of kick and creaminess. I am definitely going to try this again.by
